
Ginger is tropical flowering plant in the same family as cardamom, galangal and turmeric. It grows up to 1 meters and develops rhizomes underground. To make dried ginger powdered spice the tubers are harvested after 8-10 months and the washed, peeled, dried and ground. We recommend thinking about dried ginger as quite different from fresh ginger. Ginger powder has more heat and flavor that engulfs your whole mouth. We like to cook it with fresh ginger to add layers of ginger flavor. We also use it a lot in simple stir fries, curries and baking. This ginger is grown in slopes of Ukhrul by indigenous farmers. It is triple washed, sliced and sun-dried before made into powder.
