This chili is an heirloom species from the village of Sirarakhong. It has been cultivated for generations and is the pride of the famers living here. The cool, rainy climate creates a micro climate that really makes this chili unique. The chili is around 20 cm when it is harvested at the end of the summer. The chili is then sun dried and heat smoked over open fires creating a deep, smokey flavor reminiscent of Mexican chilies. This chili has become one of our favourite spices and we absolutely love it with pork or chicken. Not much else is needed since the flavor is so incredibly complex. Locally the chili is used in vegetable and pork stews where slow and long cooking time really bring out the character. Harvest: October 2021 Ukhrul, Indien
